These grapes were affected by Botrytis in about 10% of the Clusters. As a result, the grapes achieved a high level of sugar without too much dehydration, thereby creating a wine full of wonderful freshness yet showing the special "Noble Rot" character. "Noble Rot" is a beneficial mold that grows on ripe white wine grapes in the vineyard under specific climatic conditions. Through the process, the wine developed seductive aromas of peach, apricot, ginger and buttered toast. The wine is high in residual sugar yet incredibly balanced with a rich, complex, honeyed character.
2007 was the coolest vintage for sometime and this enabled the fruit to stay on the vines with a full canopy well into November. These grapes were affected by Botrytis in about 10% of the Clusters. So the grapes achieved this high level of sugar without too much dehydration, creating a wine full of wonderful freshness yes showing those special "Noble Rot" character. The grapes were gently pressed to neutral oak barrels where a long and cool fermentaion lasting over 4 months produced a wine with seductive aromas of Peach, Apricot, Ginger and buttered toast.
This wine can be enjoyed young, but with a few years of aging will develop an amazing array of more complex characters.
